Stuffed Sesame and Pistachio Wrapped Chicken
Ingredients:
Marinade
- 7 egg whites
- 2 ½ oz. pale dry sherry
- 2 oz corn oil
- 3 tablespoons coarse kosher salt
- ½ cup + 1 tablespoon cornstarch
Chicken
- 8 chicken breasts
- 8 oz. Black Forest ham, sliced into 1 oz. slivers
- 6 oz. white sesame seeds
- 6 oz. roasted Nichols Farms Pistachios
- 3 oz. black sesame seeds
Directions for Marinade:
- Blend ingredients in food processor until frothy.
Directions for Chicken:
Slice a pocket in breasts and stuff with sliced ham. Press breasts into marinade and cover airtight, refrigerated 12-24 hours. Combine white and black sesame seeds with pistachios for coating mixture. Remove breasts from marinade, gently remove excess. Quickly pat very firmly into coating mixture. Sauté over medium high heat in clarified butter.
