Dry Roasted Pistachios With No Added Oil: The Nichols Farms Difference

At Nichols Farms, the way we roast our pistachios isn’t a processing decision. It’s a values decision.

We’re a fourth generation California family farm, and that means something to us beyond the label. It means the people growing these pistachios are the same people making decisions about how they’re roasted, packaged, and sold. There’s no layer of distance between the field and the finished product, and that accountability shapes everything, including why we’ve never used added oils in our roasting process.

Most commercially roasted nuts are coated in oil during processing. It helps seasonings adhere, creates a more uniform texture, and gives that familiar richness consumers expect. It’s a practical solution, and a widely used one. But pistachios are already one of the most naturally flavorful, nutrient-dense nuts on the market. Research published in the American Journal of Clinical Nutrition found that even one daily serving of pistachios lowered LDL cholesterol by 9% as part of a heart-healthy diet, with greater benefits at higher intake levels (Gebauer et al., 2008). They bring protein, fiber, potassium, and antioxidants like lutein and zeaxanthin to the table on their own. Adding oil isn’t elevating the ingredient. It’s just adding oil.

Dry roasting lets the pistachio speak for itself. The flavor comes through the way it should, earthy, rich, and unmistakably pistachio, with a crunch that’s clean and satisfying with no greasy finish to work around. When you open a bag of Nichols Farms pistachios, what you taste is what we grew.

That simplicity extends to our ingredient labels, and we think that matters to the people buying our products. According to the International Food Information Council’s 2023 Food and Health Survey, 67% of Americans consult the ingredient list when evaluating a food product, and healthfulness is a key purchase driver for 62% of respondents (IFIC, 2023). Our customers are informed, they’re intentional about what they eat, and they deserve a product that respects that. A clean label isn’t a trend for us. It’s just what happens when you don’t add anything unnecessary in the first place. And on the occasions when we do enhance our pistachios with additional seasonings, we do it the same way we do everything else, in small batches, with care, and without oils to make the flavors stick. The flavor earns its place on its own.

This is what we mean when we talk about the Nichols Farms difference. It’s not one big dramatic choice. It’s a lot of smaller ones, made consistently, over generations, because we believe the integrity of what we grow is worth protecting all the way to the bag.
